Preheat oven to 160°C.
Line a baking tray with baking parchment.
In a large bowl, combine the flour, rolled oats, shredded coconut and sugar.
In a saucepan, melt the butter with the honey over low heat until the mixture is smooth.
In a small cup, mix the baking soda with the boiling water, then add it to the melted butter mixture. Be careful, it will foam slightly!
Pour the liquid mixture into the bowl containing the dry ingredients. Mix well until smooth.
Form small balls of dough and place them on the baking sheet, spacing them slightly apart.
Flatten each ball slightly with the back of a spoon.
Bake for about 15-20 minutes, or until golden brown.
Leave to cool on the baking tray for a few minutes before transferring to a wire rack to cool completely.

For even more indulgent cookies, add a few chocolate chips or dried fruit to the dough before forming the balls. 🍫🍪
