Prepare the dough: mix rice flour, butter, egg and a pinch of salt until smooth. Wrap in cling film and refrigerate for 1 hour.
Preheat oven to 180°C.
Spread the pastry in the tart tin and prick the base with a fork.
Peel, thinly slice and lemon the apples.
Arrange the apple slices on the tart shell.
Sprinkle with sugar and cinnamon (optional).
Bake the tart for about 35 minutes, until the crust is golden and the apples are tender.
Leave to cool before serving.
