In a skillet, cook diced apples with sugar, cinnamon (if using) and lemon juice until tender, about 5-7 minutes. Allow to cool.
Roll out the puff pastry on a lightly floured surface and cut into equal-sized circles using a cookie cutter or bowl.
Place a tablespoon of cooled applesauce in the center of each pastry circle.
Fold the dough over the filling to form a semicircle and seal the edges by pressing with a fork.
Arrange the turnovers on the prepared baking sheet. Brush with beaten egg for a shiny golden finish.
Bake in the preheated oven for about 15-20 minutes, or until golden and crisp.
