Simmer for about 40 minutes, stirring occasionally, until the jam thickens.
Remove any scum that forms on the surface with a skimmer.
While the jam is cooking, sterilize the glass jars by boiling them in water for 10 minutes.
Pour the hot jam into the sterilized jars, seal tightly and turn the jars upside down to create an air vacuum. Leave to cool.
Leave the jam to stand for at least 12 hours before eating, to allow the flavours to develop.
