Heat the oil in a frying pan or wok over medium heat.
Add the onion and garlic and sauté until golden.
Stir in carrots and peppers, sauté for 3-4 minutes until slightly tender.
Push the vegetables to the side of the pan, crack the eggs into the empty space and cook until scrambled.
Add the cooked rice and mix well with the vegetables and eggs.
Pour the soy sauce over the mixture and stir until well coated.
Season with salt and pepper to taste.
If using peas, add them now and stir.
Cook for a further 2-3 minutes until heated through.
Garnish with spring onion or fresh coriander if desired and serve hot.
Tip
🍚 For tastier fried rice, use cooked and cooled rice, preferably from the day before. This will allow the rice to be drier and absorb flavors better! 👌
