Peel the potatoes, cut into thick slices and cook in boiling water until tender. Drain and set aside.
Meanwhile, heat the olive oil in a frying pan. Sauté the chopped onions and crushed garlic until translucent.
Add the red bell pepper cut into strips and the diced tomatoes. Cook for about 5 minutes, until the vegetables have softened slightly.
Add the desalted and chopped cod to the pan. Pour in the white wine and simmer over low heat for 10 minutes.
Add the cooked potatoes to the pan. Season with black pepper to taste. Gently combine all ingredients and cook for a further 5 minutes to allow flavors to blend.
Remove from heat and sprinkle with chopped fresh parsley. Add black olives for extra flavor.
Serve hot, straight from the pan to the table for an authentic experience.
