Chop the onions and peppers. Peel and crush tomatoes. Crush the garlic cloves.
Heat the olive oil in a casserole dish. Brown the chicken thighs on all sides, then remove and set aside.
In the same pan, sauté the onions and garlic until golden. Add the peppers and cook for 5 minutes.
Add the chopped tomatoes, bouquet garni and white wine. Return the chicken thighs to the casserole. Season with salt, pepper and Espelette pepper. Cover and simmer over a low heat for 40 minutes.
Serve hot, with rice or fried potatoes.
