Preheat oven to 200°C. Line the tin with baking parchment, leaving the edges overhanging for easy removal.
In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition.
Pour in the cream and continue mixing until smooth. Add the flour, salt and vanilla extract (if using) and mix until well incorporated.
Pour the mixture into the parchment-lined tin. Smooth the surface with a spatula.
Bake for 50 minutes. The top should be golden brown and the crust slightly burnt, but the inside should remain creamy. If the center still wobbles slightly, it's perfect!
Remove the cake from the oven and leave to cool at room temperature for at least 2 hours. For a firmer version, you can refrigerate it.
