Peel and slice the bananas. Sprinkle with 1 tablespoon sugar.
In a frying pan, melt 1 tablespoon of butter over medium heat. Add the banana slices and caramelize for about 5 minutes on each side. Set aside.
In a bowl, combine the flour, 1 tablespoon sugar and a pinch of salt.
In another bowl, beat the egg, add the milk and vanilla extract. Stir into the flour mixture to make a smooth pancake batter.
In the same pan as the caramelized bananas, add a little butter or oil. Pour in a small ladleful of pancake batter and spread to form a thin pancake. Cook each pancake for about 2 minutes on each side, until golden-brown.
Garnish each pancake with the caramelized bananas.
Fold the crêpes in half, sprinkle with powdered sugar if you wish, and serve hot.
Tip
🥞 For even more gourmet pancakes, add a touch of cinnamon to the batter and serve with a drizzle of honey 🍯. You can also add crushed walnuts for a little crunch 🍌.
