Preheat your oven to 180°C (gas mark 6).
Wash and stem the cherries. You can pit them if you like, but tradition dictates that the pits are left in for a more authentic taste.
Mix the flour, sugar and salt in a bowl. Add the eggs one at a time, whisking well between each addition to obtain a smooth batter. Gradually stir in the milk, then add the vanilla sugar if using.
Generously butter the tart tin to prevent the clafoutis from sticking.
Arrange the cherries evenly in the bottom of the tin, then pour the batter over them.
Bake for approximately 35 minutes. The clafoutis is ready when the pastry is golden and firm to the touch.
Leave to cool slightly before serving, either warm or at room temperature.
Tip
For an even more fragrant clafoutis, add a few drops of bitter almond extract to the dough. This will sublimate the taste of the cherries! 🌰
