Blend the shortbread cookies into a fine powder. Mix with melted butter. Spread the mixture over the bottom of the springform pan and press down well. Set aside in the fridge.
In a large bowl, whisk the fromage frais to soften it. Add the chestnut cream and sugar and mix well. Add the eggs one by one, then the flour and vanilla extract.
Pour the cheesecake mixture over the cookie base.
Preheat oven to 160°C. Bake for 1 hour. Leave to cool in the switched-off oven, door ajar.
Place in the refrigerator for at least 4 hours, ideally overnight.
Top with chestnut cream and decorate with marrons glacés.

For a smooth cheesecake, gently whisk the mixture to avoid incorporating too much air. This will prevent cracking during baking! 🥄✨
