Heat the olive oil in the casserole over medium heat. Add the chicken thighs and sausages and brown on all sides. Remove from the pan and set aside.
In the same pot, add the onion, garlic, carrots and celery. Sauté for a few minutes until tender.
Return the chicken thighs and sausages to the casserole dish. Add the white beans, chicken stock, bay leaf and thyme. Season with salt and pepper.
Bring to the boil, then reduce heat to low. Cover the pot and simmer for about 1 hour, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
Remove the bay leaf and thyme sprig. Serve hot in soup plates.
