Heat the pan with a teaspoon of olive oil. Cook the chicken over medium heat for about 7 minutes on each side, until golden and cooked through. If you're using a barbecue, grill the chicken fillet for about 5 minutes on each side.
Cut the burger bun in half. Spread a thin layer of mayonnaise on the base and add a layer of mustard if desired.
Place a lettuce leaf, two cucumber slices and two tomato slices on the bread base.
Place the cooked chicken fillet on top of the vegetables.
