    Stir in the red curry paste, tomato paste, turmeric, cumin and coriander powder. Mix well to coat the chicken with all the spices.

    Pour the coconut milk into the pan and bring to the boil. Reduce the heat to medium-low, cover and simmer for about 15 minutes, until the chicken is cooked through and tender.

    Season with salt and ground black pepper to taste.

Tip

For perfectly cooked, fragrant basmati rice, use a ratio of 1 part rice to 1.5 to 2 parts water, depending on your texture preference. Rinse the rice in cold water before cooking to remove excess starch and obtain well-separated grains. Once cooked, let the rice sit covered for a few minutes before serving for an even lighter, airier texture. 🍚✨
