Heat the vegetable oil in a large frying pan or wok over medium heat. Add the minced onion and sauté until translucent.
Add the garlic and grated ginger to the pan, and sauté for about 1 minute until the aromas are released.
Add the chicken pieces to the pan and brown on all sides.
Stir in the red curry paste, tomato paste, turmeric, cumin and coriander powder. Mix well to coat the chicken with all the spices.
Pour the coconut milk into the pan and bring to the boil. Reduce the heat to medium-low, cover and simmer for about 15 minutes, until the chicken is cooked through and tender.
Season with salt and ground black pepper to taste.
Garnish with fresh coriander leaves if desired.
Serve hot with cooked basmati rice.

For perfectly cooked, fragrant basmati rice, use a ratio of 1 part rice to 1.5 to 2 parts water, depending on your texture preference. Rinse the rice in cold water before cooking to remove excess starch and obtain well-separated grains.
