Cut the chicken into medium-sized pieces. In a large bowl, mix together the yoghurt, crushed garlic, grated ginger and spices (paprika, cumin, turmeric and garam masala). Add the chicken pieces to the marinade and leave to rest for 20-30 minutes.
Heat the oil in a frying pan or casserole over medium heat. Add the chopped onions and sauté until translucent. Then add the marinated chicken pieces and brown for 5 to 7 minutes.
Add the diced tomatoes and simmer for a further 10 minutes until they break down. Stir in the tikka masala curry paste, then pour in the coconut milk. Mix well and cook over a low heat for 20-25 minutes to thicken the sauce.
Serve the Chicken Tikka Masala piping hot with basmati rice or naan. Garnish with fresh coriander for a fragrant finishing touch.
