Heat the olive oil in a large frying pan over medium heat.
Add the onion and garlic and sauté until golden and fragrant, about 5 minutes.
Add the ground beef to the pan. Cook, stirring constantly, until browned.
Add the diced red bell pepper and sauté for a few minutes.
Add the crushed tomatoes, tomato paste, drained kidney beans, cumin, paprika and cayenne pepper. Season to taste with salt and pepper.
Simmer over low heat for 45 minutes to 1 hour, stirring occasionally, until the sauce thickens.
Once cooked, serve hot, garnished with fresh coriander if desired.
Tip
To intensify the flavours, add a pinch of grated dark chocolate just before serving. The chocolate adds extra depth to the sauce and brings out the spices. 🍫
