Preheat your oven to 200°C and place paper moulds in a muffin tin.
In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt.
In a separate bowl, beat the egg with the milk, vegetable oil and vanilla extract until smooth.
Pour the liquid mixture into the bowl of dry ingredients and mix gently until well incorporated. Do not overmix to avoid dense muffins.
If you wish to add chocolate chips, nuts or dried fruit, gently fold them into the dough.
Fill each muffin tin about two-thirds full with the batter.
Bake the muffins for about 18-20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Let the muffins cool slightly before unmolding. They can be eaten warm or at room temperature.
Tip
