Preheat oven to 200°C. Using a piping bag, pipe strips of choux pastry onto a baking sheet.
Bake for 25 minutes until golden. Leave to cool.
Beat the egg yolks, sugar and flour in a bowl. Pour in the hot milk while stirring.
Return to the pan and cook over a low heat until the mixture thickens. Stir in the melted chocolate and leave to cool.
Cut the éclairs in half lengthways. Using a piping bag, fill the inside with the chocolate cream, then close the eclairs.
Sprinkle with powdered sugar (optional). Refrigerate for 30 minutes.
