Prepare a strong coffee and let it cool completely.
Separate the egg whites from the yolks.Whisk the yolks with the sugar until the mixture is white and frothy.Add the mascarpone to the mixture and continue whisking until smooth and creamy. Add vanilla if desired.
In another bowl, beat the egg whites until stiff with a pinch of salt.
Using a spatula, gently fold the egg whites into the mascarpone mixture using circular movements.
Quickly dip the sponge cookies in the cooled coffee (without soaking them).Place a first layer of cookies in the bottom of your dish.Spread half the mascarpone cream on top.Repeat with a second layer of soaked cookies, then the rest of the cream.
Sprinkle the top generously with cocoa powder using a fine sieve.
Place the tiramisu in the refrigerator for at least 4 hours to allow the flavours to blend.
Just before serving, you can grate some dark chocolate over the top for even more deliciousness.
