Preheat oven to 180°C.
Peel and dice the potatoes. Cook in boiling water for 10 minutes, then add the peas and cook for a further 5 minutes. Drain.
Heat the olive oil in a frying pan over medium heat. Add the cod fillets and cook for 3-4 minutes on each side, until golden-brown.
Arrange the cod fillets on a sheet of aluminum foil, add a few sprigs of rosemary to each fillet, and season with salt and pepper. Close the foil tightly.
Place in the oven for 8-10 minutes to finish cooking the fish and release the rosemary's fragrance.
Serve the cod fillets hot with the potatoes and peas.
