Soak the gelatine leaves in a bowl of cold water for 5 minutes. If using agar-agar, proceed directly to the next step.
Pour the cream into a saucepan and add the sugar and instant coffee. Heat over medium heat without boiling, stirring regularly to dissolve the sugar and coffee.
Off the heat, add the softened gelatine leaves (or agar-agar) to the hot cream. Mix well until completely dissolved.
Divide the mixture between small individual molds or ramekins.
Let cool to room temperature, then place in the fridge for at least 4 hours to set.
Grate the dark chocolate finely and arrange in a circle around the plate.
Carefully turn out the panna cotta onto the plate with the grated chocolate. Add a few coffee beans on top for decoration.
Tip
For an even more intense taste, you can use freshly ground coffee instead of soluble coffee. Simply brew 100 ml of strong coffee to replace the coffee extract. ☕👌
