Prepare the dough by mixing the flour, yeast, warm milk, sugar and salt in a bowl. Knead until smooth, then gradually add the cold butter. Cover with cling film and refrigerate for 1 hour.
Meanwhile, prepare the almond cream by mixing the almond powder, sugar, egg, softened butter and almond extract in a bowl. Set aside in the fridge.
On a lightly floured surface, roll out the dough into a large rectangle. Fold it into thirds (like a letter) and turn it a quarter turn. Repeat the folding process twice, letting the dough rest in the refrigerator between each folding for about 15 minutes.
Roll out the dough into a large rectangle and cut into 8 isosceles triangles.
Place a tablespoon of almond cream at the base of each triangle and roll up to form crescents.
Preheat oven to 180°C.
Place croissants on a baking tray lined with baking parchment. Brush lightly with milk or beaten egg and sprinkle with flaked almonds.
Bake for 15-20 minutes, until golden and crisp.
