Steps
  1. 1

Prepare the dough by mixing the flour, yeast, warm milk, sugar and salt in a bowl. Knead until smooth, then gradually add the cold butter. Cover with cling film and refrigerate for 1 hour.

  2. 2

Meanwhile, prepare the almond cream by mixing the almond powder, sugar, egg, softened butter and almond extract in a bowl. Set aside in the fridge.

  3. 3

On a lightly floured surface, roll out the dough into a large rectangle. Fold it into thirds (like a letter) and turn it a quarter turn. Repeat the folding process twice, letting the dough rest in the refrigerator between each folding for about 15 minutes.

  4. 4

Roll out the dough into a large rectangle and cut into 8 isosceles triangles.

  5. 5

Place a tablespoon of almond cream at the base of each triangle and roll up to form crescents.

  6. 6

    Preheat oven to 180°C.

  7. 7

Place croissants on a baking tray lined with baking parchment. Brush lightly with milk or beaten egg and sprinkle with flaked almonds.

  8. 8

Bake for 15-20 minutes, until golden and crisp.

Tip

For an extra touch of indulgence, you can lightly dust your almond croissants with powdered sugar just before serving. This will add a touch of sweetness and aesthetic appeal to your delicious viennoiseries. Serve them warm with a good cup of coffee for an even more delicious breakfast or snack! 🥐☕️✨
