Butter the bread slices on both sides.
Assemble the croque-madame: on a slice of bread, place a slice of cheese, the ham, then another slice of cheese. Cover with the second slice of bread.
Cook the croque: place the sandwich in a hot frying pan and brown for 2-3 minutes on each side, until golden brown and crisp.
Transfer the croque to a baking tray and place in the oven for 5 minutes to melt the cheese.
Cook the egg: in the same pan, cook the fried egg according to your preference (runny or well-cooked).
Assemble the croque-madame: remove the croque from the oven and place the fried egg on top.
Season with salt and pepper, and garnish with chopped chives if desired.
