Soak black beans in cold water for at least 8 hours, preferably overnight. Drain and rinse before cooking.
Heat a little oil in the casserole over medium heat. Sauté onion and garlic until golden.
Add the chopped meats to the casserole and brown lightly.
Stir in drained beans, bay leaves, paprika, salt and pepper. Cover with water until all ingredients are submerged.
Bring to the boil, then reduce heat and simmer over low heat for about 3 hours, stirring occasionally. Check that the beans are cooked and tender.
Once cooked, adjust seasoning to taste.
Serve hot with white rice, orange slices and farofa (grilled cassava).
