Mix the yeast with the warm water in a bowl and leave to rest for 5 minutes. Add the flour and salt, and knead to a smooth dough. Leave to rest for 1 hour at room temperature.
Peel and finely chop onions. In a bowl, mix the crème fraîche with a pinch of pepper and nutmeg (if desired).
Preheat oven to 250°C. Roll out the dough thinly into an oval shape on a sheet of parchment paper.
Spread the crème fraîche evenly over the pastry. Divide the onions and bacon over the top.
Transfer the flammekueche to a baking tray and bake for around 15 minutes, until golden and crisp.
Cut into equal parts and serve hot.
