Preheat oven to 180°C
Unroll the shortcrust pastry on a lightly floured surface and cut into 4 rectangles to match the size of your tartlet molds. Place each rectangle in a tartlet mould and press lightly around the edges to fit. Prick the bottom with a fork.
In a saucepan, heat the milk over medium heat until simmering.
Meanwhile, in a bowl, whisk the egg yolks with the sugar until the mixture whitens. Add the cornflour and vanilla extract and mix well.
Pour the hot milk over the egg mixture, stirring constantly.
Return the mixture to the saucepan and heat over low heat, stirring constantly, until the cream thickens. Remove from the heat and leave to cool.
Spread the cooled pastry cream over the base of each tartlet.
Peel and cut the fruit into slices or chunks, as you prefer. Arrange them harmoniously on the pastry cream of each tartlet.
Heat the apricot jam in a small saucepan until liquid, then brush it gently over the fruit on each tartlet to give it a beautiful shine.
Leave to cool before serving. You can leave the tarts to rest in the fridge for 1 hour to allow the flavors to meld further.
Ready to serve!
