Wash all vegetables. Cut the tomatoes, bell pepper, cucumber, onion and garlic into large chunks.
Place all the vegetables in the blender. Add olive oil, red wine vinegar, salt and pepper.
Blend until smooth. If desired, add stale bread previously soaked in water to thicken the soup.
Taste and adjust seasoning if necessary. Refrigerate for at least 2 hours before serving to allow flavours to blend.
