In a large bowl, mix flour, baking soda and gingerbread spice mix.
In a separate bowl, beat butter and brown sugar until creamy. Add the egg, molasses and vanilla extract, then mix well.
Gradually fold the dry mixture into the wet mixture until the dough is smooth.
Divide the dough into four portions and wrap in cling film. Refrigerate for at least 30 minutes.
Preheat the oven to 180°C and line the baking sheets with baking parchment.
On a lightly floured work surface, roll out each portion of dough to about 0.5 cm thick. Use cookie cutters to cut out ghosts, pumpkins, bats and black cats.
Place the cookies on the prepared baking sheets and bake for 12-15 minutes, until lightly browned.
Cool completely on a wire rack.
Use melted dark chocolate to draw the eyes of ghosts and black cats, and royal icing to decorate bats and pumpkins.
Tip
For even more expressive eyes, use small colored candies or mini-smarties in addition to melted dark chocolate. For bats, you can add edible glitter for a shiny effect! 🦇✨
