Cut the leek into thin slices. Heat a little olive oil in a frying pan, then fry the leek for 5 minutes until tender.
Add the spinach to the pan with the leek and cook for 2-3 minutes until just wilted. Season to taste with salt and pepper.
In a small frying pan, dry-roast the pine nuts over medium heat until golden brown (about 2 minutes). Set aside.
Brush the halibut with a little olive oil and season with salt and pepper. Heat up your barbecue, then grill the halibut for 3 to 4 minutes on each side, until nicely grilled and opaque throughout.
Place the spinach and leek mixture on a plate. Place the grilled halibut on top. Sprinkle the dish with roasted pine nuts and lemon zest, if desired.
