In a bowl, combine the soy sauce, mirin, brown sugar, minced garlic and grated ginger to create the teriyaki marinade.
Place chicken fillets in a resealable plastic bag or shallow dish. Pour half the marinade over the chicken and reserve the rest.
Marinate the chicken for about 15 minutes at room temperature.
Preheat your non-stick pan over medium-high heat and add the vegetable oil.
Remove the chicken fillets from the marinade and drain off any excess liquid. Keep the remaining marinade.
Cook the chicken fillets in the preheated pan for approx. 6-7 minutes on each side, until golden brown.
Meanwhile, bring the reserved marinade to the boil in a saucepan. Reduce the heat and simmer for a few minutes, until it thickens slightly to form teriyaki sauce.
Once cooked, remove the chicken fillets from the pan and brush with the reduced teriyaki sauce.
Allow chicken fillets to rest for 5 to 10 minutes before slicing.
Serve sliced grilled teriyaki chicken, garnished with sliced green onion, sesame seeds and a dash of black pepper. Serve with steamed rice or stir-fried vegetables.

🐔 For a healthier version, you can use honey or maple syrup instead of brown sugar in the teriyaki marinade.
