Prepare the marinade by mixing the olive oil, fresh herbs, paprika, salt and pepper in a bowl.
Generously brush the vegetable skewers with the marinade, making sure they are well coated. Leave to marinate for 10 minutes.
Preheat the barbecue over medium heat.
Place the vegetable skewers on the hot barbecue grill. Grill for approx. 7-8 minutes on each side, until vegetables are tender and lightly caramelized.
Remove skewers from barbecue and let stand for 5 minutes before serving.
Tip
For even tastier vegetable skewers, add a squeeze of lemon just before serving 🍋. You can also intersperse pieces of halloumi for a higher-protein option 🧀🌶️.
