Preheat oven to 180°C (gas mark 6).In a saucepan, bring the water, milk, chopped butter, salt and sugar to the boil.
Remove the pan from the heat and add the flour all at once. Stir vigorously with a wooden spatula until smooth.
Return the pan to a low heat and continue stirring for about 2 minutes to dry out the dough.Transfer the dough to a bowl and leave to cool for a few minutes.
Add the eggs one by one, mixing well between each addition, until you have a smooth, glossy paste.
Place the dough in a pastry bag fitted with a smooth tip.On a baking sheet lined with baking parchment, shape the dough into small mounds.
Sprinkle the mounds generously with pearl sugar.Bake for 20 minutes, until golden and puffed.
Cool on a wire rack before serving.

❌ For even lighter chouquettes, don't open the oven door during baking so they puff up perfectly! 🚪🔧
