Peel the potatoes, cut into chunks and cook in a pot of boiling salted water for about 15 minutes, until tender.
Drain and mashed potato with a potato masher.
Add the chopped butter and blend until smooth. Then add the egg yolks, nutmeg, salt and pepper. Mix well.
Preheat oven to 200°C. Place the purée in a piping bag fitted with a star tip. On a baking sheet lined with parchment paper, pipe the purée into rosettes.
Place in the oven for 20 minutes, until the apples are golden brown.
