Prepare all the vegetables: dice the eggplant, zucchini, peppers, onion and tomatoes.
Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and garlic and sauté until translucent.
Add the peppers and cook for 5 minutes, then add the eggplant and zucchini. Stir well.
After 10 minutes, add the tomatoes, herbes de Provence, salt and pepper. Stir and simmer over low heat, covered, for 25-30 minutes.
Once the vegetables are soft and melt-in-the-mouth, adjust the seasoning if necessary. Serve the ratatouille hot, garnished with fresh basil if desired.
