    Prepare the cookie roll:Preheat your oven to 180°C (th. 6).Separate the egg whites from the yolks. Beat the egg whites until stiff with a pinch of salt.In a bowl, beat the yolks with the sugar until the mixture whitens. Add the sifted flour and cocoa, then gently fold in the egg whites.Spread the dough evenly on a baking sheet lined with baking parchment.Bake for 10 minutes.

    Roll out the cookie:Remove the cookie from the oven and turn it out onto a damp kitchen towel. Carefully remove the parchment paper and roll the cookie on itself with the tea towel. Leave to cool.

    Prepare the chocolate cream:Melt the chocolate with the liquid cream in a bain-marie. Add the powdered sugar and butter (if you want more softness).Let the cream cool before using.

    Assemble the log:Unroll the cooled cookie and spread the chocolate cream over its entire surface.Roll the cookie again to form the log, then wrap in cling film and leave to rest in the fridge for 1 hour.

    Decorate the log:Cut off a small section of the log to form a "branch" and arrange it on its side.Cover the log with the remaining chocolate cream, then create "bark" effects with a fork.Add sprigs of rosemary, candied cherries, and dust with powdered sugar to imitate snow. Add other edible decorations to suit your taste.

Tip

For an even more gourmet log, add a thin layer of jam (such as raspberry) before the chocolate cream. This will add a slight acidity that will balance out the richness of the chocolate! 🍫❤️
