Heat the oil in the tagine. Sauté onion and garlic until golden.
Add chicken thighs and brown on all sides.
Sprinkle with turmeric, ginger, cumin, paprika, salt and pepper. Mix well.
Add water to cover chicken. Cover and simmer for 1 hour over low heat.
Add the lemon wedges and olives. Continue cooking for 30 minutes.
Sprinkle with fresh coriander and parsley.
Serve warm with Moroccan bread or semolina.
