Clean mussels by rinsing well in cold water. Discard any that are already open and won't close when tapped.
Preheat your oven to 200°C and bake the fries as indicated (about 20 minutes).
Peel and cut potatoes into sticks. Fry in hot oil (180°C) for 5 to 8 minutes, until golden and crisp.
Slice the onion and chop the garlic. In a large saucepan, melt the butter and sauté the onion and garlic for 3 minutes.
Pour the mussels into the pan, then add the white wine, pepper and a little salt. Cover and cook over medium heat for about 10 minutes, until the mussels open.
Chop the parsley and add to the mussels just before serving. For a smoother sauce, add the crème fraîche and stir gently.
Arrange the mussels in a dish with the fries on the side. Enjoy immediately!

🔥 To make your fries even crispier, cook them a first time at 150°C to precook them, then dip them in oil at 180°C for a second cooking. Result: perfectly browned, crispy fries! 🍟
