Preheat your oven to 180°C (gas mark 6).
In a bowl, combine the rolled oats, flour, sugar, baking powder and salt.
Add the butter, egg and vanilla to the dry mixture. Mix well until smooth.
If you wish, add chocolate chips to the dough.
Shape dough balls with a tablespoon, then flatten slightly on a parchment-lined baking sheet.
Bake for 10 to 12 minutes, until the edges are golden.
Cool on a wire rack before serving.
Tip
For even more gourmet cookies, add a pinch of cinnamon or nutmeg to the dough. You can also vary the pleasures by replacing the chocolate chips with dried fruit or nuts! 🍫
