    In a bowl, mix the yeast with the warm milk and a spoonful of sugar. Leave to stand for 10 minutes until foamy.

    Mix flour, sugar and salt in a large bowl. Add the sourdough, eggs, butter in small pieces, lemon and orange zests, and vanilla extract. Knead until smooth and elastic.

    Add the raisins and candied orange peel to the dough. Knead to distribute the fruit evenly.

    Cover the dough with cling film and leave to rest in a warm place for 6 hours, until doubled in size.

    Deaerate the dough by gently pressing down. Place in a buttered panettone mold.

    Cover again and leave to rise for a further 6 hours, until the dough reaches the edge of the tin.

    Preheat oven to 180°C. Brush the top of the pastry with a little milk and sprinkle with flaked almonds. Bake for around 45 minutes, until the top is golden.

    Leave the panettone to cool in its mould before unmoulding.

Tip

To give your panettone an even lighter, airier crumb, make the recipe in several rising stages, letting the dough rest in the fridge between each rise to develop the flavors and texture 🍞✨.
