In a large pot of boiling salted water, cook pasta according to package instructions until al dente. Drain pasta, reserving a small amount of cooking water (approx. 60 ml) for the sauce.
While the pasta is cooking, heat the olive oil in a frying pan over medium heat. Add the bacon and sauté until crisp and golden. Add the minced garlic and sauté for a further 1 minute or so.
In a large bowl, beat the eggs with the freshly grated Parmesan and ground black pepper.
Add the still-warm pasta to the bowl with the egg and cheese mixture. Mix quickly to coat the pasta. The egg will be slightly cooked by the heat of the pasta, creating a creamy sauce.
Stir in the crunchy guanciale and mix again to distribute the flavours.
Serve immediately on warm plates, forming a small pasta nest. Break a fresh egg over each pasta nest.
Sprinkle extra Parmesan and ground black pepper over the eggs for a finishing touch.
Eat immediately to fully appreciate the flavours. Mix the egg with the pasta just before eating for a creamy, gourmet texture.

Une recette simple et efficace, personnellement j'ai rajouté du beurre pour encore plus de saveurs. 👍
