Cook pasta al dente according to package instructions. Once cooked, drain and run under cold water to cool.
In a large salad bowl, combine the cooked pasta, cherry tomatoes, olives, feta cheese, cucumbers and red peppers.
In a small bowl, prepare the vinaigrette by mixing the olive oil, lemon juice, salt and pepper.
Pour the dressing over the pasta salad and toss gently to coat all the ingredients.
Leave the salad to rest in the fridge for at least 30 minutes to allow the flavours to marry.
