Preheat oven to 220°C.
Roll out the puff pastry on a lightly floured surface and cut into 12 squares. Place each square in a muffin tin.
In a saucepan, heat the milk with the split vanilla pod (scrape out the vanilla seeds).
In a bowl, mix the egg yolks, sugar and flour until smooth.
Pour the hot milk over the egg mixture while whisking.
Return to the saucepan and heat over low heat, stirring constantly, until the cream thickens. Remove the vanilla pod.
Fill each square of puff pastry with the crème pâtissière.
Bake the Pasteis de Nata for 10 to 15 minutes, or until golden brown.
Leave to cool for 30 minutes. Sprinkle with cinnamon and lemon zest if desired.
