Preheat your oven to 180°C (gas mark 6).
Butter the tart tin and line it with the shortcrust pastry. Prick the base with a fork and set aside in the fridge.
In a saucepan, heat the milk (and split vanilla pod if using) until boiling, then remove from heat.
In a bowl, beat the eggs with the sugar until the mixture whitens. Then add the cornflour and mix well.
Pour the hot milk over this mixture, stirring constantly.
Pour the mixture into the tart tin and bake for around 40 minutes, until the flan is golden brown.
Cool to room temperature, then refrigerate for at least 2 hours before serving.
Tip
🌼 For an even creamier flan, stir a teaspoon of vanilla extract into the milk and egg mixture. If you like richer flavors, try adding a touch of lemon or orange zest to the batter before baking. 🍋🍊
