Preheat your oven to 120°C.
In a bowl, beat the egg whites until stiff. Gradually add the powdered sugar while continuing to beat until you obtain a smooth, glossy meringue. Gently fold in the white vinegar and cornstarch.
On a baking sheet lined with parchment paper, shape the meringue into a circle (or use a piping bag for greater precision). Make a slight indentation in the center to accommodate the cream.
Bake the meringue for 1 hour. Then leave to cool in the switched-off oven with the door slightly ajar.
While the meringue is cooling, whip the crème fraîche with the powdered sugar and vanilla extract until stiff.
Once the meringue has cooled, fill the hollow with chantilly. Arrange the berries on top of the whipped cream.
Chill for at least 1 hour before serving.
Tip
For a meringue that's perfectly crisp on the outside and fluffy on the inside, make sure the egg whites are at room temperature before beating! 🌡️🧁
