Preheat your oven to 180°C.
Spread the shortcrust pastry in a buttered tart tin.
Fry the lardons in a frying pan until lightly browned. Drain on paper towels.
In a bowl, beat the eggs and add the crème fraîche. Season with salt, pepper and grated nutmeg.
Spread the lardons over the bottom of the shortcrust pastry, then pour the egg and cream mixture on top.
Sprinkle with grated Gruyère.
Place the quiche in the preheated oven and bake for about 40 minutes, or until golden brown and the filling is set.
Leave to cool slightly before slicing and serving.
