Mix the yeast, sugar and warm water in a bowl. Leave to stand for 5 minutes.
Mix the flour and salt in a large bowl. Add the yeast mixture and warm milk. Whisk until smooth.
Cover the bowl with a clean cloth and leave the dough to rest in a warm place for 1 hour, until it doubles in volume.
Heat a frying pan over medium heat and grease lightly with butter. Place cookie cutters in the pan and pour batter halfway up the sides.
Cook the crumpets for about 5 minutes, until bubbles form on the surface. Gently turn them over and cook for a further 3-4 minutes, until golden brown.
Serve warm with butter and jam, if desired.

😁 For perfectly round crumpets, use uniform-sized cookie cutters and lightly oil them before placing them in the pan. 🔄
