Peel the potatoes and slice thinly. Thinly slice the onion.
Heat the olive oil in a frying pan over medium heat. Add the potatoes and onion. Cook for about 10-15 minutes, until the potatoes are tender and lightly browned. Drain on a flat plate.
Beat eggs in a medium bowl, add salt, pepper and boiled potatoes. Mix well.
In the same pan, add a little more oil if necessary and pour in the egg and potato mixture. Cook over medium heat for about 5-7 minutes, until the edges are set and the underside is lightly browned.
Place a flat plate on top of the pan and turn the tortilla onto the plate. Gently slide the tortilla into the pan to cook the other side for another 5-7 minutes, until completely cooked and golden-brown.
Once cooked, slide the tortilla onto a serving plate. Sprinkle with chopped parsley if desired.
Cut the tortilla into individual portions like a pie and serve warm or at room temperature.
Tip
For an extra touch of freshness, you can add diced red or green bell pepper to your Spanish tortilla while the potatoes and onion are cooking.
