Preheat oven to 180°C (gas mark 6).
Heat the olive oil in a frying pan over medium heat, add the finely chopped onion and sauté until translucent. Add the chopped garlic (if using) and spinach. Cook until the spinach is reduced. Drain if necessary.
In a bowl, beat the eggs with the crème fraîche, season lightly with salt (the feta is already salted), pepper and a pinch of nutmeg if you like.
Roll out the pastry in a tart tin and prick the base with a fork. Spread the cooked spinach over the pastry, then crumble the feta cheese over it. Pour the egg/cream mixture evenly over the top.
Bake the tart for about 30 minutes, until the pastry is golden and the top is set.
Leave to cool for a few minutes before slicing, and serve with a green salad if you wish.
Tip
If you want even more flavor, add a little grated cheese (such as Parmesan or Gruyère) to the top before baking! This will give a delicious crispy golden crust. 🧀✨
