In a large bowl, combine ground pork, chopped shrimp (if using), Chinese cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt and pepper. Mix well until smooth.
Place the sheets of dumpling dough on a clean, lightly floured surface. Place about a teaspoon of filling in the center of each sheet.
Using a small kitchen brush, lightly moisten the edges of each sheet of dough. Fold the dough in half to form a semicircle, then pinch the edges to seal the ravioli. You can also create decorative folds by folding the ravioli over several times.
Place the ravioli on lightly oiled parchment paper to prevent them from sticking to the steam sieve.
Bring water to the boil in the steam sieve. Arrange the ravioli in the sieve, leaving a little space between them to prevent sticking during cooking.
Place the steamer over the pot of boiling water, cover and steam for about 12-15 minutes, until the ravioli are cooked through and tender.
Remove the cooked ravioli from the sieve and serve hot with a dipping sauce made from soy sauce and rice vinegar, or a hot pepper sauce according to your preference.
