Chop the onion and garlic. Slice the carrots, dice the bell pepper and cut the green beans into 3 cm pieces.
Cook rice according to package instructions. Drain and set aside.
Heat 1 tablespoon of olive oil in a large frying pan. Add the onion and garlic and sauté until golden. Then add the carrots and bell pepper. Sauté for about 5 minutes.
In the same pan, push the vegetables to one side and add the second tablespoon of olive oil. Add the ground beef and cook until golden brown.
Add the drained chickpeas, cumin, paprika, salt and pepper. Mix well and cook for 10 minutes.
Serve the ground beef and vegetable stir-fry on a bed of hot rice. Garnish with fresh parsley if desired.
